My Recipes
I've been cooking for longer than I care to say. I'm a nerdy demon who will tempt your taste buds like I'm some kind of incubus or succubus.
I am a bit of a food snob. I despise Domino's and McDonald's because their product taste like crap. You don't have to use the top shelf ingredients when you start out or are broke. Even if you use store bands & ingredients you're still going to make a homemade item it's going to be a whole shit ton better than store bought. With enough practice anyone should be able to make almost restaurant quality items or better.
My must have items aren't bank busters. Look at thrift shops for them first. A cast iron skillet. A larger sized pizza stone. And a bread maker.
I fucked up a whole bunch of breads when I first started to mess around with yeasted dough. It's as much an art form as it chemistry. The nerd in me likes to see what physics and chemistry goes on when cooking.
You're not going to get anywhere if you don't try to learn from your mistakes. When you don't give up and keep at it you start using your own tweaks.

Caca del Pollos
For the past 26 years or more I have been making Italian - Tex/Mex fusion dishes. Chicken Shit takes a while to prep. Once it's done you have a good 15 min meal ready to go. Like most things marinated it tastes better the time afterward. You can also freeze a 1 gallon freezer bag if you can get a better priced 10lb bag.

Chai Tea Ice Cream
A no egg ice cream recipe that has the flavor of chai tea.... Or just about any tea for that matter.

Flat Bread or Pizza Crust
A base recipe for flat bread or pizza crust.
This is a basic pizza crust recipe, I also use it for flat bread and cook it on the pizza stone for a texture that I like. Gimme a good tasting regular crust.

Flavor Rush Hot Chocolate
It's not really a traditional Mexican Hot Chocolate but it's also not the run of the mill North American Hot Cocoa either. It does have more spice than Wonder Bread White People might be able to handle. The correct way is flavor balance, not making it just spicy brown water and having a blow torch bung hole the next morning.
